Enchiladas stuffed with corn, squash, sweet potatoes, carrots, and cheese in a yellow chile sauce. Served with rice and beans.
Pizza Panini
A pepperoni-spiced tofu steak, melted CT cheese, pizza sauce, eggplant, red peppers, and pistachio pesto on ciabatta. Served with a kale salad.
Vindaloo Curry
Tofu, potatoes, and peas in vindaloo sauce. Served over brown rice.
Eggless Salad Wrap
Chopped vegan egg, chopped chickpeas, tomatoes, kale, celery, red bell pepper, and fennel with a creamy dijon dressing in a whole wheat wrap.
