Squash Tacos

Roasted squash with poblano chiles, pepitas, crema, crispy greens, and peanut guajillo salsa

Short History: Squash comes from the Narragansett word askutasquash, which means “eaten raw or uncooked.” While squash certainly does have many nutritional properties, some Indigenous American tribes believed in the extreme nutritional properties, and would bury it with their dead to sustain them on their final journey. Butternut squash is a great resource of Vitamin A and C, magnesium, and potassium, and the rest of this dish from The Vegan Taste will provide you with antioxidants, Vitamin B, riboflavin, iron, calcium, and more!

Reheating Instructions: Warm the filling over medium in a pan. Toast the tortillas if you like.
