Spring Couscous

Short History: Couscous is a traditional North African dish of semolina, which is usually served with a meat or vegetable stew spooned on top. The first written reference to Couscous comes from a 13th-century cookbook, “The cookbook of the Maghreb and Al-Andalus.” The name of this dish comes from the Berber word(s) seksu or kesksu, which means “well rolled” or “well formed.” One cup of cooked Couscous gives you 35% of your daily requirements of fibers and provides a range of B vitamins.
