This dish consists of two sides. The first is a side of purple sweet potatoes roasted with a light coating of bac’n maple syrup. The second is a dish of tamarind glazed tofu over toasted cashew rice and mustard seed.
Purple sweet potatoes are an antioxidant powerhouse chocked full of anthocyanins, which has been shown to reduce the risk of several chronic diseases.
Reheating Instructions: Roast the sweet potatoes in a covered pan at 325F until warm. Gently warm the tamarind glazed tofu over medium heat in a pan until warm.
