Short History: Lentils are thought to have originated in the Mediterranean and have been a staple protein source since prehistoric times – they are one of the oldest domesticated crops in the world, and are the oldest pulse crop. Depending on where you are in the world, lentils were either treated as a delicacy (i.e. Egypt) or a poor man’s food (i.e. Greece). They have an earthy, nutty flavor, and might even be peppery, depending on the type of lentil. This meal from The Vegan Taste will provide you with iron, folate, protein, and more!
