Short History: Lacinato kale comes from 18th century Italy when it became popular amongst the gardeners because of the color and the texture of the vegetable. Thomas Jefferson grew this type of kale in his garden at Monticello in 1777. It is typically sweeter and more delicate than most other variations of kale. It is also sometimes called “dinosaur kale” because the bumpy leaves resemble what many think dinosaur skin might have looked like.
