Red Curry Lemongrass Tofu Skewers

Fun Facts: Lemongrass, also known as Cymbopogon, oily heads, or fever grass, come from Asia, Africa, Australia, and a variety of different tropical areas. There are so many different varieties of lemongrass – there are over 50 species in the genus. The uses for lemongrass are also many, with people using lemongrass in cosmetics, cuisine, and medicine! It was also one of the top scents used in perfume during the early 17th century. With this meal from The Vegan Taste, you will receive protein, antioxidants, fiber, and more!

Reheating Instructions: Warm the rice and tofu over medium heat for 2 to 3 minutes, but leave the green papaya salad at room temperature.
