Ingredients

  • 1 cup pulled porq (vegan pulled pork substitute)
  • 2 large sweet potatoes, peeled and diced
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup enchilada sauce
  • 8 small corn tortillas
  • 1/2 cup vegan cheese
  • 1 avocado, sliced
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C).
  2. Prepare the Sweet Potatoes: Boil the diced sweet potatoes in water until tender, about 10 minutes. Drain and set aside.
  3. Combine Ingredients: In a large bowl, mix together the pulled porq, sweet potatoes, black beans, corn, and half of the enchilada sauce.
  4. Assemble the Enchiladas: Warm the tortillas in the microwave for a few seconds to make them pliable. Place a scoop of the filling on each tortilla, roll it up, and place it seam-side down in a baking dish.
  5. Add Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with vegan cheese.
  6. Bake: Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.
  7. Garnish and Serve: Top with sliced avocado and fresh cilantro before serving.
