Pasta and Market Veggies with Preserved Lemon Pesto

Cavatelli pasta tossed in preserved lemon pesto, with market veggies, chickpeas, & sundried tomatoes. This was a Casa Terra favorite!

Short History: Pesto is thought to come from the Ancient Romans, who had a paste called moretum, made by crushing garlic, salt, cheese, herbs, olive oil, and vinegar together. It is also thought to be a descendant of the Genoan sauce agliata – a mash of garlic and walnuts. The addition of basil is first documented in the mid-19th century by Giovanni Battista Ratto in his cookbook. The meal from The Vegan Taste, which includes lemon pesto, will provide you with Vitamins A, C, &K, calcium, magnesium, antioxidants, and more!

Reheating Instructions: Warm in a pan over medium heat for 2 to 3 minutes.
