Mushroom Étouffée

Mixed mushrooms, market veggies, and toasted yellow split peas in a Creole tomato sauce over rice

Étouffée is one of the most loved dishes in Cajun cuisine. Étouffée in French means “smothered” – in relation to this dish, it is refered to the “meat” of the dish being smothered in vegeatables with a sauce of the chef’s choosing. This results in a stew-like dish that was first served in Hebert Hotel in the early 1920s. This dish from The Vegan Taste will provide you with fiber, lignans, magnesium, antioxidants, and more!

“I loved the flavor! There were so many tiny mushrooms and different types of mushrooms I’ve never eaten before! Everything was so fresh! I especially liked the flavor of the green beans.” – April He. from Queen Creek
