Ingredients

  • 1 cup vegan meatballs
  • 1 cup roasted vegetables (bell peppers, zucchini, onions)
  • 1 cup sugo (tomato sauce)
  • 1/2 cup CT cheese (vegan cheese)
  • 1 ciabatta roll
  • Fresh basil, for garnish

Instructions

Preheat the Oven

First, preheat your oven to 375°F (190°C).

Prepare the Veggies

Slice the vegetables and toss them in olive oil, salt, and pepper. Then, roast in the oven for 20-25 minutes.

Cook the Meatballs

While the veggies are roasting, cook the vegan meatballs according to the package instructions.

Assemble the Sub

Warm the ciabatta roll in the oven for 5 minutes. Spread sugo sauce on both sides of the roll. Next, add the cooked meatballs, roasted veggies, and top with CT cheese.

Melt the Cheese

Place the assembled sub back in the oven for a few minutes until the cheese melts.

Garnish and Serve

Finally, garnish with fresh basil and serve immediately.
