- 1 cup vegan meatballs
- 1 cup roasted vegetables (bell peppers, zucchini, onions)
- 1 cup sugo (tomato sauce)
- 1/2 cup CT cheese (vegan cheese)
- 1 ciabatta roll
- Fresh basil, for garnish
Instructions
Preheat the Oven
First, preheat your oven to 375°F (190°C).
Prepare the Veggies
Slice the vegetables and toss them in olive oil, salt, and pepper. Then, roast in the oven for 20-25 minutes.
Cook the Meatballs
While the veggies are roasting, cook the vegan meatballs according to the package instructions.
Assemble the Sub
