Kinpira Veggies & Noodles with Miso-glazed Sweet Potatoes

Crisp Japanese-style veggies over soba noodles with miso glazed sweet potatoes.

Short History: Miso is from China in the 4th century B.C., and it was introduced to Japan in the 7th century by Buddhist Monks! It wasn’t until 1960 that Miso was introduced to the English by George Ohsawa. Specifically, in Japan, miso usually followed the cultivation rice, and was developed in many different ways by many different people – the name of the place it was made in is often the name of the specific type of miso. In this dish by The Vegan Taste you will be given miso-glazed sweet potatoes, along with kinpira veggies – providing you with fiber, vitamin K, potassium, antioxidants, and more!

Reheating Instructions: Warm over high heat for 1 minute.
