Hungarian Mushroom Stew

Our take on Hungarian Hunter’s Stew, this dish features sausage, jackfruit, mushrooms, carrots, and sauerkraut in a tangy tomato sauce.

Short History: Bigos, or bigoski, is commonly known as, “Hunter’s Stew” in English – it is a traditional single pot dish served during the winter months, or for special occasions. There is a cookbook from 1682 – Stanisław Czerniecki’s Compendium Ferculorum – that contains many different versions of Bigos, often with varying types of fish. It was often taken on journeys and for hunting trips. They used to be served with what they called a “cheer” – The pre-prepared bigos was heated on a dish with a sealed lid. When enough pressure would build up, the lid would erupt with a “cheer” to signify that it was ready for consumption.
