Grilled panini with eggplant, zucchini, red pepper, Casa Terra cheese, hummus, and preserved lemon pesto.
Short History: Even though the earliest reference to a sandwich that resembles a panini comes from 16th century Italy, paninis didn’t become popular in Milan until the 1970’s and 80’s! It became so popular there that during the 80’s they invented a term to describe people who ate at the new panini bars – paninaro – fashionable young people who showed off their status symbols. Paninis have become a classic sandwich that is extremely popular in the US and around the world.
