A French onion soup loaded with lentils, barley, mushrooms, potatoes, zucchini, & kale
Short History: Lentils are thought to have originated in the Mediterranean and have been a staple protein source since prehistoric times – they are one of the oldest domesticated crops in the world, and are the oldest pulse crop. Depending on where you are in the world, lentils were either treated as a delicacy (i.e. Egypt) or a poor man’s food (i.e. Greece). They have an earthy, nutty flavor, and might even be peppery, depending on the type of lentil.
