Short History: Fettuccine is typically associated with Tuscan and Roman cuisine but was brought to America in the early 1900’s when Alfredo di Scrofa created Fettucine Alfredo for his pregnant wife who was experiencing a bout of particularly bad morning sickness. She loved it so much that she insisted that he put it on their restaurant’s menu! A decade later, Douglas Fairbanks and Mary Pickford, who were Hollywood actors, came to Rome and ordered this dish from this restaurant. They asked for the recipe and brought it back with them to the United States where it became pretty popular with famous musicians, actors, politicians, and other celebrities. As a result, Fettucine Alfredo is a very popular dish in the United States of America, but considerably less so in Rome where it came from! The type of pasta, Fettucine, is long, flat, and thick that goes well with thick sauce.
