Fajitas

Fajitas with market veggies and chickenless strips with creamy salsa verde, black beans, and a sweet corn cake

Short History: Fajitas come from Mexican Ranch workers who were living in West Texas between 1930-1945. They were given the objectively worse cuts, and so they had to come up with creative and hearty ways to use it! Fajitas gained popularity outside of Texas when a man named Sonny Falcon opened the first fajita taco concession stand in 1969. Currently, there are many different kinds of fajitas! This vegan version from The Vegan Taste will provide you with protein, vitamins, minerals, fiber, antioxidants, and more!

Reheating Instructions: Warm the filling over medium high. Toast the tortillas if you like and fill. Warm the beans over medium. Sweet corn cake at room temperature.
