Enchiladas Suizas

Creamy green enchiladas loaded with veggies and CT cheese, with a side of Spanish rice and chipotle black beans.

Short History: Enchiladas Suizas (“Swiss Enchiladas”) have a contested history. One telling of the history of enchiladas suizas says that it originated in Emperor Maximillian’s kitchen during the French invasion of Mexico. Another one says that Mexico city invented this dish in 1950. Yet another one, which utilizes the name more, is that Swiss immigrants living in Mexico integrated their culinary traditions with those of Mexico, creating this creamy dish. Whatever the history, this dish is a delicious one packed with Vitamin A & C, potassium, fiber, antioxidants and more!

Reheating Instructions: Warm in a covered pan over medium for 3 minutes.
