Short History: Cuban cuisine is a mix of Indigenous Taino, African, Spanish, and Caribbean cuisines. Like quesadillas, when the Spanish settlers came, they brought new types of livestock, and therefore new flavors, with them. The specific tropical climate of Cuba means that tropical fruits and root vegetables are incorporated into many Cuban dishes and are a staple of the cuisine.
