Short History: The peanut is a native of the Western Hemisphere – presumably originating in South America, and then being spread throughout the world by the Spanish explorers. In the United States, the peanut didn’t become very popular until after the Civil War, when there was an increase in the demand for peanut oil, peanut butter, salted peanuts, etc. Currently, there is an average of 5.5 billion pounds of peanuts produced per year in the United States! Peanuts are a great source of healthy fats, protein, and fiber, and also contain a lot of potassium, phosphorus, B vitamins, and magnesium!
