Ciambotta with Polenta

A classic southern Italian dish of market veggies and beans in sugo over creamy polenta.

Short history: Polenta comes from Northern Italy, where it was a staple for working class and peasant families – a simple, hearty, satisfying dish that can be used with any number of varying ingredients – leading to a variety of tastes and uses to this simple meal. People use polenta in sweet dishes such as muffins and cakes, and savory dishes topped with olive oil, garlic, mushrooms, peppers, and onions. In this variation of Polenta, you will receive essential minerals, good dietary fiber, and a reduction in blood cholesterol, all in one Italian flavor-packed meal.

Reheating Instructions: Warm in a pan over medium heat for 2 to 3 minutes or microwave* on high for 2 minutes.
