Short History: Caldo Verde is one of the most beloved staples of Portuguese cuisine – in 2011, Portugal held a contest to determine the 7 wonders of Portuguese cuisine; the only one that was decided unanimously was Caldo Verde. Originally from the Minho region, it has spread both throughout the country and throughout the world, with a variety of different recipes and adaptations. It’s also very healthy – most of the variations of this dish still come packed with vitamins, minerals, and fiber.
