A hearty, comforting Portuguese stew of sausage, potatoes, and kale.

Short History: Caldo Verde is one of the most beloved staples of Portuguese cuisine – in 2011, Portugal held a contest to determine the 7 wonders of Portuguese cuisine; the only one that was decided unanimously was Caldo Verde. Originally from the Minho region, it has spread both throughout the country and throughout the world, with a variety of different recipes and adaptations. It’s also very healthy – most of the variations of this dish still come packed with vitamins, minerals, and fiber. This variation from The Vegan Taste is also full of antioxidants, potassium, and more!

Reheating Instructions: Simmer for 2 to 3 minutes.
