Beet & Barley Risotto

Golden beets, purple cauliflower,  Casa Terra cheese, & Brussels sprouts with a lemony barley risotto.

Health Fun Facts: Golden or yellow beets are heart healthy, excellent kidney and body cleansers, high in powerful antioxidants, lowers blood pressure, lowers cholesterol, treats anemia and fatigue, and more. They decrease the risk of heart disease and helps in the prevention of various cancers, and are also good for eyes and skin. Studies have shown that beets can significantly lower blood pressure by up to 4–10 mmHg over a period of only a few hours.

Reheating Instructions: Warm in a pan over medium heat, or microwave on high for 2 minutes.
