A reuben with sauerkraut, grilled zucchini, dressing, and CT cheese on rye bread with a veggie salad side.
Short History: There are many possible histories to the Reuben sandwich – one is that a poker group from the Blackstone Hotel called “the committee” created the sandwich, and then put it on one of the members’ sandwich shop menu. Another is that a man named Arnold Reuben created the sandwich for famed Broadway actress Marjorie Rambeau. Whatever the origins for this sandwich, this delicious vegan rendition will provide you with anti-inflammatories, probiotics, vitamin K2, and more!
Reheating Instructions: Place the filling in a covered pan over medium heat for 2 minutes. Lightly toast the bread and brush with oil, if you like, then fill.
