Short History: American biscuits originated with scones in the British Isles and were first mentioned in print in the 16th century. The “prototype” of the biscuit/scone is thought to come from Scottish kitchens, and as butter, wheat, and baking soda & powder slowly became more available, they slowly became softer and lighter and more recognizable as what we have today. When they came to the US, they boomed in the South – buttermilk and soft wheat are plentiful in this region – and became so popular that they have multiple restaurants dedicated just to them. Meanwhile in New England, scones became more popular, and especially gained popularity in the 1990’s with the coffee culture that was emerging at the time!
