Short History: Pesto is thought to come from the Ancient Romans, who had a paste called moretum, made by crushing garlic, salt, cheese, herbs, olive oil, and vinegar together. It is also thought to be a descendant of the Genoan sauce agliata – a mash of garlic and walnuts. The addition of basil is first documented in the mid-19th century by Giovanni Battista Ratto in his cookbook.
