Short History: Udon is a type of noodle that is used very commonly in Japanese cuisine. One story of the origination of these noodles states that Enni, a Rinzai monk, introduced flour milling to Japan from Song China, which led to invention/increased popularity of Udon, Soba, pancakes, and more! Another story talks about a Buddhist priest named Kukai introducing Udon noodles to Shikoku island during the Heian Era in the ninth century.
