Short History: Udon is a type of noodle that is used very commonly in Japanese cuisine. One story of the origination of these noodles states that Enni, a Rinzai monk, introduced flour milling to Japan from Song China, which led to invention/increased popularity of Udon, Soba, pancakes, and more! Another story talks about a Buddhist priest named Kukai introducing Udon noodles to Shikoku island during the Heian Era in the ninth century. Whatever the history of these noodles, they provide you with high amounts of both fiber and B vitamins, and the rest of the meal will give you protein, amino acids, iron, calcium, and more!
