Tamarind Curry

A sweet and sour Southeast Asian curry with tofu, white sweet potatoes, & trumpet mushrooms.

Short history: Tamarind comes from the tamarind tree! The pulp of the fruit from the tree is sweet and tangy, and is used in cuisines all around the world. It’s also used in traditional medicine, and is even used as a polish for metals! It is believed that it is indigenous to the tropical regions of Africa, but it also may have come from India. This dish from TVT will provide you with antioxidants, fiber, potassium, vitamin B6 & C, magnesium, and more!

Reheating Instructions: Heat over medium.
