Mushroom Scampi

Seared mushrooms in a garlicy lemon sauce with zucchini and cherry tomatoes over pasta.

Short History: Scampi, in the pasta dish, is a uniquely Italian-American cuisine that is now immensely popular all over the United States and Canada. The roots/actual dish is from Italy, and focuses more on grilled langostines – the Italian-American version uses pasta and coos it differently. This version of Scampi from The Vegan Taste provides you with a great source of antioxidants, vitamin A, C, & E, potassium, and more!

Reheating Instructions: Warm over medium heat.
