Short History: The precursor to Gyros – the doner kebab – was developed in Bursa during the 19th century and brought to Athens after World War II. It was brought there by immigrants from Anatolia and the Middle East. A Greek variation was developed and called gyros! By 1970, they were a very popular fast food in Athens, and in Chicago and New York! The Garlics – John and Margaret Garlic – created the first assembly line to produce Gyros in Chicago in the early 1970’s. They later sold their company to Gyros, Inc.
