Fig and Artichoke Fattoush

Figs, artichokes, tomatoes, cucumber, Casa Terra feta, and chopped toasted pepitas. Served over rice and lentils.

Short History: Fattoush is said to have originated in northern Lebanon. Lebanese farmers would fry leftover pita scraps in a bit of olive oil for extra flavor.  To build the rest of the Fattoush, they would simply throw the pita chips in with whatever in-season vegggies and herbs that they had on hand – so there are a lot of different versions of this dis! This one from The Vegan Taste will provide you with folate, fiber, vitamins C & K, and more!

Reheating Instructions: Eat at room temperature.
