Choriqueso, or queso flameado, is said to have originated from the borderland between Northern Mexico and Southwestern US. As for queso by itself, it first time it is referenced in writing is in the 1816 novel El Periiquillo Sarniento by José Joaquín Fernández de Lizardi. It started appearing in American restaurants in 1910, when a restaurant in El Paso started serving it.
