Pibil Tacos
Vegan Tacos with Pibil-Style Filling and Fresh Garnishes

Slow-roasted mushroom and ground porq in a guajillo, citrus, and recado rojo sauce. Served with pickled onions, creamy salsa verde, pineapple pico, and a side of squash.

Short History: Cochinita Pibil is a slow-roasted dish that comes from the Yucatán Peninsula of Mexico. The pulled pork is typically marinated in acidic citrus juice and roasted a traditional Mayan oven, called a pip, while wrapped in a banana leaf. Pibil in Mayan actually means “under the ground” referring to the cooking method that the Mayans developed using a pit with a fire at the bottom and banana leaves on top.

Ours is made with shredded pulled vegan porq substitute slow roasted with mushrooms. Pibil Tacos have a sweet and earthy taste, with spices and citrus added to cut through the sweetness.

Reheating instructions: Warm in a pan over medium for 2 minutes or microwave on high for 2 minutes and fill the tortillas
