Watermelon Salad with Video

This salad just tastes of summer! I love it because it has so many complex flavors, but leaves you feeling ‘light’. You can eat and swim 30 minutes later, for example. Is there a better reason to whip up a big batch for a pool party?

I love all the colors of this salad!

Time to Make: 10 minutes
Serves 2 as dinner or 4 as a side

4 cups of watermelon cubes
2 tablespoons of lime juice
1 teaspoon of lime zest
2 teaspoons of fresh mint, minced
8-12 kalamata olives, pitted, sliced
1-2 teaspoons of ancho powder
¼ teaspoon of salt
¼ cup of shelled, unsalted, roasted pepitas (pumpkin seeds)

In a bowl, combine all the ingredients, toss, and eat.
Does it get any more simple for a quick summer dinner?

This salad is inexpensive, quick and easy. However, it is very gourmet. I think if this were served in a fancy all vegan New York  or Los Angeles restaurant I would have to sell plasma to afford it! Because making it on your own is so quick and easy, it is a great after work meal. It is also great to whip up for a movie night with friends. Grab bowls, then throw away the forks. Eat this with your fingers while you watch reruns of Breaking Bad. Heisenberg lives!
