I am someone who loves big taste. I enjoy things that taste like they have a ton of calories – but don’t. I also hate artificial flavors and sweeteners. This is a recipe that tastes amazing with big rich flavors, however is low calorie and healthy. When I feel like being a little decadent I add a splash of coconut cream.
Time to Make: 20 mins Serves 4
1 1/3 cups of oatmeal
1 1/3 cups of water
Pinch of salt
About 1 ½ cups of almond milk
1 teaspoon vanilla extract
½ teaspoon cinnamon
1 ½ cups of sliced strawberries
Agave or sugar to taste
Coconut Cream (optional topping)
Fresh Sliced Berries (optional topping)
Heat a pot over medium heat with the water and salt. Bring to a boil. Add the oatmeal, reduce heat to medium and stir until thickened and cooked.
Basically, just make oatmeal. Your favorite oats, whether they are steel cut, old fashioned or oatbran. You can be flexible about that part. Then the magic begins.
Remove from heat and add the almond milk, vanilla, cinnamon, and strawberries. Add agave or sugar to taste. Dish into bowls and if desired top with fresh sliced strawberries and coconut cream. Serve.
This tastes just like strawberry shortcake. I swear. It is the best of both worlds, a good for you recipe that tastes bad for you.
