I love this recipe and I am proud to share it! Though it only uses a few ingredients, the flavor is beyond amazing. I first developed this recipe for a class on quinoa, and then it instantly became something that we keep in the refrigerator. I eat this in moderation, but when you really NEED dessert, it’s a great choice! Our cat Oradi thinks so, too. She loves the sweetened coconut cream. She licks my bowl clean of any leftover trace. If she finds a stray quinoa, she licks it clean. This recipe is therefore people and pet approved.
1 cup of uncooked quinoa
1 3/4 cups of water
1 can (14 oz) of coconut cream or coconut milk
1 cup of diced pineapple
1 cup of pitted cherries (either fresh, frozen, or canned in light syrup, drained)
¼ cup of agave
Combine the quinoa and water in a small pot and place over medium heat. Cook for about 10 minutes until the water is gone. Cool. Combine all ingredients, and place in the refrigerator. Cool for 1 hour. Enjoy.
